Our Harvest

The main ingredients for our SHOCHU are barley, rice, sweet potato and water. Every single ingredient meets the highest standard possible.
“MIYAZAKI HADAKA” is Miyazaki native naked barley and it is extremely rare due to the fact of being the original breed.
It had typically been cultivated in Miyazaki prefecture in the pre-World War Ⅱ period, it became close to extinction at the end of the Showa era, in 1988. With the cooperation of the farmers, we have made strenuous efforts to revive this rare kind of naked barley since 2007.
“NATSUNOEMI” is the rice type and we use “IKEUCHIMAI” which is contract farmed in Miyazaki city. This new kind of rice is planted only in Miyazaki prefecture and its characteristics are glutinous similar to KOSHIHIKARI.
We use “KOGANE SENGAN” sweet potato. This is a special potato good for brewing. High starch content, hot and flaky.
Compared to regular edible potatoes, it has a strong sweetness and full-bodied rich flavor.
High quality SHOCHU essentially requires a large amount of high quality water. There is a well that has passed from generation to generation at the center of our distillery and this is our holy place. This well is made of hollow 100 to 150 meter deep bedrock. We draw pure water from the well to produce our SHOCHU.
SHOCHU is an “ALIVE” beverage that has an infinite variety of taste and aroma depending on various ingredients and preparation process. We carefully produce SHOCHU in which you may feel the sincerity of particular ingredients with the highest standards possible.
